Place the chicken breast in a 9″ microwave safe baking dish. Sprinkle lightly with paprika and set aside.
Combine brown sugar, orange juice, vinegar, orange peel and cornstarch in a microwave safe measuring cup and cook on high power for 2 minutes. Stir and pour over the chicken breast and cook on high power for 3 minutes.
Rotate the microwave safe baking dish, baste the chicken with the juices and then sprinkle more paprika. Cover with plastic wrap and cook on high power for 3 minutes.
